Every couple of days, internet drops or is super slow and I have to unplug/replug my modem. What is up with that?

I understand that you are having slow speed and intermittent connection issue, but we just need to confirm whether it is happening on Wi-Fi or even with direct connection. If this is only on Wi-Fi you can try changing Wi-Fi channel on the modem interface or GUI and if this happening even on direct connection hardwired to the modem we need to check the cable signal level sent to the modem provided by your internet service provider to isolate the issue. when it happens, get a screensnip of the cable connections page (shows upstream/downstream info) and the event lots. That helps to check the connection when its happening
