Will I notice a significant /noticable speed change from a 5-year sb6190 to s33?

Any performance improvement will be dependent on your ISP plan.

If your plan is up to or less than 1GB, then I would suspect not much to no performance improvement. Although the upgrade from DOCSYS 3.0 to 3.1 might give you a boost.
