I'm trying to see if it's possible to limit connections on a Wi-Fi signal per signal? doesn't look like it is but I wonder if anyone knows if I'm missing something

Yes, if you are trying to restrict device connected to the modem network you can check on this.  you can limit the connection for all the devices connected to home network whether it is 2.4 or 5G. Please follow the steps mentioned on the below article to restrict connection.
